HAM AND EGG MUFFINS

12 slices thinly sliced ham (or turkey)

2 large eggs

6 large egg whites

½ cup finely chopped onion

½ cup finely chopped red bell pepper

½ cup shredded mozzarella cheese

1 teaspoon salt, or to taste

¼ teaspoon black pepper, or to taste

Preheat the oven to 350 degrees. Line a 12-cup muffin tin with foil or silicone liners and spray with cooking spray. Place one slice of ham in each muffin cup. (This will form a well for the egg to bake in.) In a medium bowl combine the eggs, egg whites, onions, bell peppers, mozzarella, salt, and pepper. Whisk together until everything is well combined. Fill each muffin cup ¾ of the way full with the egg mixture. Bake for 25 to 30 minutes or until the eggs are set and cooked through (no longer runny in the center).

These egg muffins are a delicious way to get your protein and veggies for breakfast. I like to prepare these muffins on a weeknight and have them as breakfast during a busy week. They can be reheated by microwaving a few of them for 30 to 60 seconds.
