A big, complex morning-after drink. Pair it with ham and eggs, and grilled grapefruit halves or pineapple.

Say you wake up feeling spongy and need to cut through the clouds, the Fog Cutter will certainly help you take hold of the throttle—or so the story goes. This Trader Vic classic combines rum, gin, and brandy with fresh citrus and a sherry float. It’s beautiful to look at and balanced in taste—not too sweet. Skip the mimosa and make one of these when you need a staycation. Beware, this monster might send you right back into a fog!

    2 ounces (60 ml) light rum (Flor de Caña 4 Yr)

    1 ounce (30 ml) brandy (Paul Masson Grande Amber VS)

    ½ ounce (15 ml) London Dry gin

    2 ounces (60 ml) fresh lemon juice

    1 ounce (30 ml) fresh orange juice

    ¾ ounce (22 ml) orgeat (see page 244)

    ½ ounce (15 ml) dry sherry, to float

    Orange wheel, for garnish

    Cherry, for garnish

Shake ingredients, except sherry, with ice and strain into an ice-filled highball glass. Float the sherry on top using the back of a bar spoon. Garnish with the orange slice and cherry.
