Woodsy, bitter, bright
Serve as a starter with bacon-wrapped dates and hard cheese, like pecorino or manchego.
Created by Sam Ross at Milk & Honey in New York, this complex sipper has spawned a multitude of variations: Paper Airplane, Paper Jetplane, Balsa Airplane, and more. In addition to how easy this modern classic is to adapt, it is a surprise for drinkers who think they don’t like brown spirits. While the combination looks rich and heavy on the page, it transforms into a light drink in the glass.

¾ ounce (22 ml) amaro (Nonino Quintessentia)
¾ ounce (22 ml) Aperol
¾ ounce (22 ml) fresh lemon juice
Lemon peel, for garnish
