BICYCLETTE, OR BICICLETTA

Bitter, grapefruit, floral

Serve with rosemary crackers and antipasti.

Sometimes simplicity is the ticket, and the waifish, breezy Bicyclette appears with all the charm of a European aperitif—ready to infuse a quick dash of glam into your day. Popular in both France as La Bicyclette and Italy as La Bicicletta, it’s usually served in the afternoon at cafés. However, it is also a perfect final drink of the night, a relatively low-alcohol quaffer that says, “I’m done.” The sweetness of the white wine is balanced perfectly by the bitter Campari. Traditional recipes calls for equal parts, but we dial it back to about 3 to 1. Any light white wine will do.

3 ounces (90 ml) dry white wine

    1½ ounces (45 ml) Campari

    Lemon twist, for garnish

Pour ingredients over ice in a highball or wine glass and stir. Garnish with a lemon twist in the glass.
