JUNIPER AND TONIC

Fresh, bitter, herbaceous, lime

Serve this effervescent libation with seafood, barbecue, or a plate of cheese and charcuterie.

Mixing a homemade herbal syrup with some quality tonic water can make an inspired drink that shimmers with the same aromatics used to flavor gin. It’s easy and quick. Nurse them on muggy afternoons when you want a garden-y beverage without the sluggish after-effects of an actual Gin and Tonic (page 167). In addition to a squeeze of lime, this drink is lovely served with a sprig of mint or rosemary, or a spanked sage leaf.

    ½ ounce (15 ml) juniper syrup (page 243)

    3 to 4 ounces (90 to 120 ml) tonic (Fentimans)

    Lime wedge or herbs, for garnish

Fill a rocks or highball glass with ice. Add syrup and tonic, then stir briefly. Garnish with lime wedge in the glass.
