The Little Pink Pearl is one of the all-time great mocktails. Loosely based on the Pink Pearl, a drink that features vodka and grapefruit juice, this nonalcoholic version is similarly glamorous and pearlescent. You can purchase orgeat, an almond syrup that is popular in tiki drinks, but it’s a cinch to make from scratch (page 244). It’s the key to this drink’s opaque sheen and silky texture.
1 ounce (30 ml) fresh lime juice
2 ounces (60 ml) fresh pink grapefruit juice
½ ounce (15 ml) orgeat (page 244)
Grapefruit quarter wheel, for garnish
Shake ingredients with ice and strain into a chilled coupe glass. Garnish with grapefruit quarter on the edge of the glass.
