BASIC BEEF STOCK

Ingredients

Vegetable stock ingredients plus 1 pound of oxtail bones or beef marrow bones

Add the oxtail bones or beef marrow bones to the vegetables browning in Step 1 of the Vegetable Stock. Then continue with the Vegetable Stock recipe above.

VARIATIONS:

• Add 2 tablespoons of parsley after browning vegetables.

• Add 1 to 2 bay leaves to the water.

• Use water from cooking corn to make a sweeter broth.

GOES WELL WITH:

• As a base for all soups

• Instead of water when cooking grains
