Old-fashioned rolled oats are better for you than sugary Cocoa Puffs, but steel-cut oatmeal has even more fiber. It also has a nutty, satisfying flavor. If you soak the grain overnight, as this recipe suggests, it takes no longer than rolled oats.
Ingredients
1 cup water
¼ cup steel-cut oats
½ cup milk or unsweetened nondairy milk
STEP 1: Bring the water to a boil in a small pot. Add the steel-cut oats and cover the pot. Let the oats sit overnight in the pot.
STEP 2: In the morning, add the milk, or milk alternative, and bring to a boil. Cook the oats for 2 to 3 minutes, until soft and creamy.
VARIATION:
• For quick-cooking oatmeal, don’t soak the oats overnight. Use ½ cup old-fashioned rolled oats, or quick oats, but make sure the quick oats are plain. The packets usually have loads of sugar. Cook according to package directions. Remember: The ratio of liquid to oats is always 2:1 for rolled oats and 4:1 for steel-cut oats.
