Grains like barley take a while to cook. Try cooking them ahead and freezing them in small quantities in freezer bags. They will keep one month in the freezer.

Ingredients

1 cup hulled barley

3 cups water

Combine the barley and water in a pot and bring to a boil. Reduce the heat, cover the pot, and let simmer until the barley is tender, about 40 minutes. Serve like oatmeal or polenta, above. Or make it savory with ½ cup salsa and a poached egg on top.
