Brown rice means fiber. Lime and cilantro means flavor. This makes a flavorful bed for chili, filling for a burrito, or a great side dish for grilled meat or fish. It takes time, so start this first before preparing the other parts of the meal.
Ingredients
1 tablespoon butter
1 cup brown rice
1 lime, juiced
1½ cups water
3 tablespoons chopped cilantro, or more if desired
STEP 1: Melt the butter in a medium saucepan over medium heat.
STEP 2: Add the rice and the juice from half the lime. Stir briskly until the juice has evaporated and the rice begins to smell a little nutty, about 1 to 2 minutes.
STEP 3: Add the water and bring to a boil.
STEP 4: Reduce the heat to low. Cook, covered until air tunnels form in the rice and the liquid is completely absorbed, about 1 hour.
STEP 5: Add juice from the other half of the lime and more water if needed. Stir and fluff the rice.
STEP 6: Add cilantro as desired and serve.
This recipe can be multiplied.
VARIATIONS:
• Change the citrus and the herb: substitute lemon juice for lime; and basil for cilantro.
• Substitute parsley for cilantro for a milder dish.
