Spicy Thai Peanut Sauce

Makes 2 cups

1 cup chunky peanut butter

1/2 cup hot water

1/2 cup firmly packed dark brown sugar

1/3 cup freshly squeezed lime juice

1/4 cup soy sauce

2 tablespoons Asian sesame oil

2 tablespoons Chinese chili paste with garlic

6 garlic cloves, minced

3 scallions, white parts and 3 inches of green tops, chopped

1/4 cup chopped fresh cilantro

Combine peanut butter, 1/2 cup hot water, brown sugar, lime juice, soy sauce, sesame oil, and chili paste in a mixing bowl. Whisk until well combined. Stir in garlic, scallions, and cilantro. Whisk well again, and refrigerate until ready to use.

Note: The sauce can be refrigerated up to 1 week.
