CACAO BANANA LOLLIES

I have quite a sweet tooth but I don’t really want to indulge in processed, sugary ice lollies and ice creams. Making these fruit lollies are the perfect fix, particularly on long, hot summer days, when all you want to do is sit back and relax with a good book.

30g Lucy Bee coconut oil, melted

30g raw cacao powder

6 bananas

FOR THE TOPPINGS

Pistachios, goji berries, cacao nibs, raisins (anything you fancy!)

MAKES 12 LOLLIES

Place the melted coconut oil and cacao in a bowl and stir together until smooth and lump-free. Line a baking tray with baking parchment.

Peel the bananas, cut in half and slide onto lolly or cocktail sticks. Dunk the bananas on sticks into the melted cacao mixture. Sprinkle over your favourite topping, place on the baking tray and chill in the fridge to set, for about 1 hour.

Remove your lollies from the fridge and enjoy!
