HOMEMADE CURRY POWDER
You can make your blend as hot or mild as you like; just add more chilli.
MAKES 2–3 TBSP
1 tsp cumin seeds
1 tsp coriander seeds
1 tsp mustard seeds
1 tsp fenugreek seeds
1 tsp cardamom pods
1 tsp ground ginger
1 tsp ground turmeric
½–1 tsp chilli powder, depending on how much heat you want
Put a heavy-based frying pan over a medium heat and add all the seeds, moving them around so that they don’t burn. After about 1 minute, you will get a wonderful, fragrant aroma. Remove from the heat and leave to cool.
Blitz the cooled seeds to a fine powder in a spice or coffee grinder. Mix in the remaining spices and give a final blitz. Store in a recycled Lucy Bee jar.
