GARAM MASALA
For a flavour boost, add garam masala at the end of a recipe.
MAKES 2–3 TBSP
1 tbsp green cardamom pods
5cm stick cinnamon
1 tsp cumin seeds
1 tsp black peppercorns
½ tsp grated nutmeg
½ tsp whole cloves
Blitz all the spices to a fine powder in a spice or coffee grinder. Store in a recycled Lucy Bee jar.
