BROWN RICE PASTA BAKE

My mum makes a divine lasagne, but this is a simplified version – it tastes every bit as wonderful and provides all the pleasure of a lasagne, but with a lot more ease!

Lucy Bee coconut oil, for greasing

300g organic brown rice pasta

300g Bolognaise sauce

200g white sauce

150g Parmesan, grated

Large handful of chopped parsley leaves

Preheat the oven to 200°C/400°F/gas mark 6. Lightly oil an ovenproof dish.

Cook the pasta according to the packet instructions, but leaving it slightly under-cooked (it will cook more when baked). Drain well.

Put the drained pasta in a large mixing bowl with the Bolognaise sauce, white sauce, 100g of the Parmesan and the parsley, and stir together gently. Transfer to the prepared dish, sprinkle with the remaining Parmesan and bake in the oven for 30–40 minutes until starting to brown.

Remove from the oven and, if you can resist, let it stand for 5 minutes before serving, with a green salad.
