PUPPY PANCAKES
MAKES 8–10 SMALL PUPPY PANCAKES.
This simple recipe is a staple favorite in our house, and the use of rice flour makes for a lighter mixture than other denser dog-friendly pancake variations.
2 eggs
1 cup plain organic yogurt
1 tablespoon honey
½ cup rice flour
½ teaspoon cinnamon
1. In a medium bowl, whisk together the eggs, yogurt, and honey.
2. Whisk in the rice flour and cinnamon. You will be left with a smooth pancake batter.
3. Heat a greased pan to a low heat and spoon the batter to form a small pancake.
4. Wait about 1–2 minutes until the first side cooks before flipping the pancake and cooking the other side.
5. Serve plain, with a sprinkle of cinnamon or fresh berries.
HANDY HINT: Batter too thick? Add a teaspoon or two of warm water to thin out the mixture. Batter too runny? Add a tablespoon of rice flour and whisk through to get the right consistency.
