1. Preheat the oven to 449 degrees.
2. Place a rack on a baking sheet.
3. Place the salmon fingers, zest, salt, pepper, and flour in a bowl. Toss well.
4. Coat the fingers in a bowl of egg.
5. Also coat in a bowl of Breadcrumbs.
6. Arrange the salmon fingers on the rack.
7. Bake for 9 minutes.
8. Serve immediately.
