AN EASIER WAY TO PLANKED SALMON


Cooking salmon on a cedar plank infuses it with gentle wood flavor rather than overwhelming smokiness. Here’s how to get the same great taste, minus the mail-order plank.

1. Crimp 4 sheets of foil to make trays. Using paring knife, poke small slits in bottom of trays.

2. Place soaked wood chips in foil trays and arrange salmon skin side down directly on top of wood chips.

3. Once salmon is cooked, slide metal spatula between flesh and skin; fish should release easily.
