Homemade Hot Pork Breakfast Sausage

Freshly made at home, this breakfast sausage is a revelation to anyone who has only had store-bought sausage. The flavors are bright and spicy; try it on an English muffin with egg for a kicked-up breakfast sandwich.

Makes 8 servings

1-1/2 pounds ground pork

2 tablespoons Frank’s® RedHot® Original Cayenne Pepper Sauce

2 tablespoons grated fresh onion

1/2 tablespoon firmly packed dark brown sugar

1-1/2 teaspoons dried sage

1-1/2 teaspoons dried thyme

1/4 teaspoon salt

1/4 teaspoon dried crushed rosemary

1/4 teaspoon freshly ground black pepper

⅛ teaspoon ground cloves

⅛ teaspoon ground nutmeg

⅛ teaspoon ground allspice

1     Place all the ingredients in a medium bowl. Mix thoroughly to combine. Form into 8 small, flat patties, each about 2 inches in diameter. Arrange the patties on a platter and refrigerate 30 minutes to 1 hour.

2     Spray a large skillet lightly with nonstick spray. Over medium heat, cook the patties in the skillet, flipping once halfway through the cooking time, until browned and cooked through, 5–8 minutes total. Remove the cooked patties to paper towel–lined plates to drain. Serve immediately.
