Spicy Ranch Chicken Salad with Gorgonzola

Leftover roasted, poached, or rotisserie chicken is transformed in this flavor-packed salad. It is awesome in a sandwich, but also try it stuffed into a hollowed-out tomato for a taste sensation.

Makes 6 servings

2-1/2 cups cooked, cubed chicken breast

1/3 cup chopped green onions

1/4 cup crumbled Gorgonzola

1 small shallot, minced

1 stalk celery, diced

1/2 cup mayonnaise

1/3 cup Frank’s® RedHot® Original Cayenne Pepper Sauce

1-1/2 tablespoons Ranch Dressing Dry Mix (page 9)

1     Place the chicken breast, green onions, Gorgonzola, shallot, and celery in a medium bowl. Toss to mix.

2     In a small bowl, whisk together the mayonnaise, Frank’s® RedHot® Original Cayenne Pepper Sauce, and Ranch Dressing Dry Mix. Pour over the chicken mixture and mix until well combined. Refrigerate at least 1 hour prior to serving.
