Blue Cheese Pecan Broccoli Slaw

Try this as a side to the Buffalo Chicken Burgers (page 31). Can’t find broccoli slaw mix? Simply use 9 ounces of home-shredded broccoli stems and 3 ounces of shredded carrots. For extra blue cheese flavor, try Gorgonzola.

Makes 4 servings

1 (12-ounce) package broccoli slaw mix

1 small onion, finely sliced

1/3 cup halved toasted or raw pecans

1/3 cup crumbled blue cheese

FOR DRESSING

1/4 cup Frank’s® RedHot® Original Cayenne Pepper Sauce

1/4 cup mayonnaise

1     In a medium bowl, toss together the slaw mix, onion, pecans, and cheese. Set aside.

2     In a small bowl, whisk together the dressing ingredients until smooth. Drizzle over the salad. Toss to combine and serve immediately.

Love nuts? Bring out their natural flavor even more by toasting them. Place nuts in a dry skillet. Toast over medium heat, stirring occasionally, for about 3 minutes or until lightly browned.
