Sour Apple–Kale Tonic


Ingredients

• 1 whole apple, cored

• 1 inch fresh ginger, grated

• 1 pound kale, shredded

• 1/2 whole lemon

• 1 cup spring water

• honey, to taste

Directions

• Squeeze the juice from the lemon and cut up the apple and place in blender.

• Make sure the kale is chopped fairly fine before you add it, or you may need to toss it in a food processor before blending.

• Add ginger and water and process until smooth. then strain, and drink.

Benefits: This tonic makes a great wake-up beverage, tart, sweet, and full of vitamins. Apples are rich in antioxidants and fiber, and their phytonutrients may even reduce the risk of cancer, diabetes, and heart disease. Kale is a source of many vitamins and minerals, especially K, C, A, and B vitamins; it is high in fiber and water and detoxifies the liver by stimulating the release of bile. Lemon brings its astringent properties as well as vitamin C and potassium.
