I held a large novelty check with my name on it. I was flabbergasted, completely knocked for six. Many more beers were opened and shared with friends that night, and it’s one I’ll never forget!”

6.3 ounces (180 g) Crisp Cara Malt

4.2 ounces (120 g) Simpsons Wheat Malt

HOPS (60-MINUTE BOIL)

1.75 ounces (15 g) Simcoe (13% AA), 60 minutes

0.7 ounce (20 g) Simcoe, 15 minutes

0.7 ounce (20 g) Simcoe, 5 minutes

1.6 ounces (45 g) Simcoe, Flameout

3.5 ounces (100 g) Simcoe, Dry hop

NOTES

Mash Mash temperature, 152°F (66°C), 60 minutes

Mash out temperature, 168°F (75°C), 15 minutes

Brewing Add 1 unit Whirlfloc with 15 minutes left in the boil.
