This saison was one of the last beers that Kevin ever brewed. Sadly, he never had a chance to taste the finished beer. The Wort Hop Brewers Summer Beer Festival served it to toast to Kevin’s life.

2.82 ounces (80 g) Southern Passion (10% AA), 10 minutes

2 ounces (50 g) Southern Aroma (5% AA), Flameout

YEAST

1 packet Mangrove Jack’s M29 French Saison

Water Profile (additions to the original water)

0.282 ounce (8.02 g) calcium chloride (2/3 in mashwater, 1/3 in sparge)

0.085 ounce (2.42 g) calcium sulphate (2/3 in mashwater, 1/3 in sparge)

0.01 ounce (0.3 g) salt (2/3 in mashwater, 1/3 in sparge)

Mash Protein Rest (optional), 129°F (54°C), 30 minutes

Mash temperature, 148°F (64°C), 60–75 minutes

Mash out temperature, 167°F (75°C), 10–15 minutes

Sparge, 167°F (75°C)

Fermenting Ferment at 82°F (28°C) until reaching final gravity.
