Parmesan Cauliflower Bites

Veggies can make some of the yummiest appetizers. When I’m trying to eat healthier, I always make sure to bake any potential veggie dishes so that they’re roasted instead of fried. With just a few simple spices, you can turn any veggie into something special.

INGREDIENTS

2 large eggs, beaten

1 cup panko bread crumbs

¾ cup finely grated Parmesan cheese

½ teaspoon Italian seasoning

¼ teaspoon red pepper flakes

½ head cauliflower, cut into bite-size florets

Marinara sauce, for dipping

DIRECTIONS

1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.

2. In a small bowl, place the eggs. In a medium bowl, combine the panko, Parmesan cheese, Italian seasoning, and red pepper flakes.

3. Dip the cauliflower into the beaten eggs, then roll in the panko-cheese mixture to fully coat the florets.

4. Place on the baking sheet. Bake for 20 to 25 minutes or until golden brown.

5. Serve with the marinara sauce.
