We had a potluck luncheon in our office one day where everyone brought in a side dish. We all just picked bits of this and that to fill us up for the day. I made this noodle salad, and it was such a hit! The cold, crunchy, mayonnaise-free coleslaw really popped against the savory dressing and had a few people asking me to share the recipe.
INGREDIENTS
Dressing
⅓ cup teriyaki sauce
⅓ cup olive oil
¼ cup packed dark brown sugar
4 cloves garlic, minced
2 tablespoons Thai sweet chili sauce
Salad
1 (12.8-ounce) package chow mein or soba noodles
2 cups mayonnaise-free coleslaw mix
½ onion, finely diced
8 large radishes, sliced
DIRECTIONS
1. For the dressing: Place the teriyaki sauce, oil, brown sugar, garlic, and chili sauce in a blender and process until smooth. Cover and chill until ready to use.
2. For the salad: Bring a small pot of water to a boil.
3. Place the noodles into a large bowl and cover with the boiling water. Set aside for about 5 minutes to cook.
4. Drain the noodles and, if you wish, cut them so they are a little bit shorter and easier to deal with.
5. Add the coleslaw mix, onion, and radishes. Toss to combine.
6. Drizzle with the dressing and toss to distribute evenly. Chill until ready to serve.
