Using frozen fruit means you can make this nutritious breakfast even when pressed for time.

Ingredients
90g (3oz) oats
300ml (10fl oz) unsweetened coconut milk drink
2 frozen bananas, in chunks
200g (7oz) frozen mango chunks
1 tsp vanilla extract
30g (1oz) skin-on almonds, chopped
10g (1⁄4oz) desiccated coconut
2 handfuls of blueberries
1 Heat a non-stick frying pan over a medium heat. Add the oats and cook, shaking the pan constantly, until the oats start to brown. Transfer to a bowl and leave to cool.
2 Blend the coconut milk drink, banana, mango, and vanilla extract until smooth and creamy.
3 Divide the smoothie between two bowls and top with the toasted oats, almonds, coconut, and blueberries.
