MOROCCAN-STYLE COUSCOUS SALAD

A multicoloured meal perfectly suited for packed lunches. Even the salad dressing is good for you!

SERVES 2

Ingredients

80g (3oz) wholewheat couscous

1 tbsp raisins

400g (14oz) can chickpeas in water, rinsed and drained

1 carrot, grated

1 small red onion, diced

1 orange, segmented and its juice

1 red pepper, diced

handful each of coriander and mint, roughly torn

zest and juice of 1/2 lemon

2 tbsp olive oil

1/2 tsp each of ground cumin and ground coriander

1 garlic clove, crushed

1 Mix the couscous and raisins together in a bowl. Prepare according to the couscous packet instructions.

2 Mix in the chickpeas, carrot, onion, orange and juice, and pepper. Stir through the herbs and lemon zest.

3 Combine the lemon juice, oil, spices, and garlic in a screw-top jar, shake together, and pour over the salad. Season and toss until well combined.
