INDIAN-STYLE CHICKEN WRAP

Ingredients

150g (51/2oz) container fat-free plain yogurt

2 tsp curry powder

1 garlic clove, crushed

1 tsp grated fresh root ginger

juice ½ lemon

2 skinless chicken breasts, cut into strips

3 wholemeal wraps, warmed

1 ripe mango, peeled, stone removed, and sliced

2 handfuls of baby spinach

handful of coriander

1 Mix together the yogurt, curry powder, garlic, ginger, and lemon juice in a non-metallic bowl. Add the strips of chicken, toss to coat well, and marinate for 30 minutes.

2 Preheat the grill to high. When ready, grill the chicken, turning midway, until it’s cooked through.

3 Warm the wraps and then fill with the grilled chicken, slices of mango, baby spinach leaves, and coriander. Roll up, cut in half, and serve.
