Ingredients
300g (10oz) firm tofu, cut into strips
1 tbsp fajita seasoning
2 tbsp rapeseed oil
1 garlic clove, crushed
1 red onion, cut into wedges
1 red pepper and 1 yellow pepper, cut into strips
squeeze of lime juice
freshly ground black pepper
4 small wholemeal wraps, warmed
4 tbsp plain soya yogurt
70g (21/2oz) rocket leaves
1 Toss the tofu with the fajita seasoning and half the oil. Set aside for 20 minutes; meanwhile, get the prep done.
2 Fry the tofu in a non-stick frying pan for 3–5 minutes, then set aside. Heat the remaining oil, then cook the garlic, onion, and peppers for 5–7 minutes, returning the tofu to heat through. Add the lime juice and black pepper.
3 Fill each of the warmed wraps with the tofu and veg mixture, a spoonful of soya yogurt, and the rocket.
