Ingredients
100g (31/2oz) brown rice
1 tbsp sunflower oil
1 garlic clove, crushed
5cm (2in) fresh root ginger, peeled and finely chopped
1 red chilli, seeds removed and finely chopped
300g (10oz) turkey breast strips
1 small pack (300–350g/10–12oz) stir-fry veg mix
2 handfuls of beansprouts
30g (1oz) cashew nuts
2 tsp reduced-salt soy sauce

1 Cook the rice according to the packet instructions in unsalted water. When cooked, drain and keep warm.
2 Meanwhile, heat the oil in a non-stick frying pan or wok over a medium heat. Add the garlic, ginger, and chilli and fry for 1 minute, taking care that they don’t burn.
3 Add the turkey and fry until cooked through. Next, add the veg and beansprouts and fry for 3 minutes or so.
4 Add the nuts, soy sauce, and rice, toss together for 1 minute until hot. Serve sprinkled with sesame seeds.
