TOFU SKEWERS

Marinating tofu imparts great flavours in a dish that offers anti-ageing benefits for everyone.

SERVES 2

Ingredients

250g (9oz) tofu, cut into cubes

1 tbsp olive oil

1 fat garlic clove, finely grated

1 red chilli, finely chopped

150g (51/2oz) brown rice

1 green pepper and 1 red pepper, cut into chunks

200g (7oz) cherry tomatoes

freshly ground black pepper

125g (41/2oz) plain soya yogurt

100g (31/2oz) cucumber, grated (squeeze out the excess moisture)

juice of 1/2 lemon

2 tbsp chopped mint leaves

1 Toss the tofu with the oil, garlic, and chilli in a nonmetallic dish. Leave to marinate for 30 minutes.

2 Cook the rice according to the packet instructions. Preheat the grill to medium. Thread the tofu onto 6 metal skewers with the peppers and cherry tomatoes. Season with black pepper and grill for 15 minutes.

3 Combine the yogurt, cucumber, lemon juice, and mint, and serve alongside the tofu kebabs and rice.
