My sister Loryn created this recipe years ago, and boy are we glad she did! Since then it's been a summer favourite, deliciously sweet and refreshing but still retaining all the fibre and goodness by using the whole fruit. The pineapple offers tropical sweetness, the watermelon gives juiciness and the banana makes it smooth and creamy – the perfect combination. We never measure the ingredients and it always turns out perfectly, so don’t worry too much about the weights.
1½ bananas, halved and frozen (approx. 150g)
½ pineapple, roughly chopped (approx. 300g)
⅛ watermelon, roughly chopped (approx. 600g)
1 lime, juice only (optional)
1 Place all ingredients in TC bowl, blend for 1 minute, speed 9.
Pour into tall glasses and enjoy. Can be refrigerated for up to 2 days, then simply shake or stir before serving.
NOTE: For a chilled drink, refrigerate the pineapple and watermelon before blending.
VARIATION: For a creamier smoothie, add a frozen mango or frozen strawberries. For an extra dose of goodness, add baby spinach, fresh mint or cucumber.
