This is the healthiest of desserts; in fact, it makes an equally good breakfast! It’s thick, creamy and decadent, but contains no dairy, eggs or thickeners. The matcha gives it a sophisticated flavour, while the passionfruit cuts through the richness and adds an intoxicating perfume. Assemble the parfait in glasses or jars to show off the pretty layers.
50g raw sugar
800g canned coconut milk
120g chia seeds
1 tablespoon matcha green tea powder
6 passionfruit
1 Place sugar in TC bowl, mill for 10 seconds, speed 10. Set aside approximately half.
2 Add 400g coconut milk and 60g chia seeds, mix for 5 seconds, reverse speed 4. Set aside.
3 Without cleaning TC bowl, add reserved sugar, remaining 400g coconut milk and 60g chia seeds, and matcha powder. Mix for 5 seconds, reverse speed 4. Set aside separately. Refrigerate both mixtures for a minimum of 4 hours.
4 When ready to serve, divide matcha chia mixture among 6 glasses or jars. Top each with pulp of half a passionfruit, then spoon in coconut chia mixture. Finish with remaining passionfruit.
Serve just as they are or, if you want to gild the lily, garnish with fresh berries, slices of mango or kiwi fruit or edible flowers.
