I love a creamy cocktail just as much as I love dessert, and this decadent recipe allows me to enjoy them both in one delicious serve. I can’t think of a more delightful way to finish a meal, except maybe this and a slice of cheesecake …
80g dark chocolate (70% cocoa solids), roughly broken
360g milk
80g pouring cream
80g peppermint schnapps
1 Place chocolate in TC bowl, grate for 5 seconds, speed 8.
2 Add milk and cream, heat for 6 minutes, 70°C, speed 3.
3 Add schnapps, froth for 1 minute, slowly increasing from speed 1 to 9, MC tilted to allow steam to escape.
Pour into 2 large mugs and serve immediately, with marshmallows, if desired.
NOTE: This recipe can easily be increased to serve 4 – just double the ingredients and cook for 10 minutes at step 2.
VARIATION: Any liquor can be used in this recipe. Try Baileys Irish Cream, Kahlúa, whisky or rum. For a non-alcoholic version, omit the schnapps, increase the milk to 440g and add 4 drops of food-grade peppermint essential oil.
