MAKES 1 CUP
Use this anywhere you would use regular salt. Not only will it enhance all the existing flavours, it adds its own umami seasoning (sans MSG). Make it in bulk to give as an edible gift – just be prepared for requests for top-ups. This stuff is seriously addictive!
200g coarse salt
2 garlic cloves, peeled
1 tablespoon coriander seeds
1 tablespoon mustard seeds
2 teaspoons chilli flakes
20g tamari
½ teaspoon liquid smoke (see note)
1 Preheat oven to 95°C. Line a baking tray with baking paper or a baking mat.
2 Place all ingredients in TC bowl, mill for 5 seconds, speed 9. Spread out over lined tray.
3 Bake for 10 minutes, then turn off oven. Allow mixture to cool completely inside the oven.
4 Once cool, transfer to clean TC bowl and mill for 5 seconds, speed 6.
Store in an airtight jar. It will keep for up to a year. If you find it starts to clump together over time, just put it back in the TC bowl and mill for 5 seconds, speed 6.
NOTE: Liquid smoke can be found in specialty grocers or purchased online. It literally tastes and smells like smoke in a bottle, adding amazing depth of flavour to savoury dishes.
