Five-Layer Fiesta with Green Sauce

Five layers of crispy hash browns, refried beans, cheese, fried eggs, and green sauce come together for an early morning feast. The sauce offers just enough bite to tickle the taste buds.

1. Preheat the oven to 200°F. Lightly butter a baking sheet.

2. In a large skillet, heat 3 to 4 tablespoons of the oil over medium heat. Add 3 or 4 of the hash brown patties and fry until golden brown, 7 to 8 minutes per side. Repeat with the remaining patties, adding additional oil if needed. Set on the baking sheet and put in the oven to stay warm.

3. In a medium saucepan, cook the beans over low heat, stirring occasionally, until warmed through, about 5 minutes.

4. Meanwhile, in the hash brown skillet, fry the eggs until over-easy to over-medium.

5. Spoon about 2 heaping tablespoons of the beans onto each hash brown patty. Sprinkle each with about 2 tablespoons cheese. Top with 1 egg and sprinkle with an additional 2 tablespoons cheese. Pour the green sauce over and serve warm.

Tip: You can microwave the hash browns slightly before frying to reduce your cooking time. I use the frozen hash browns because of their ease, but you can also use four or five shredded russet potatoes for the hash browns.

Green Sauce

Total Time: 10 minutes

Makes about 2½ cups

1. Mix all the ingredients until smooth with a food processor or electric mixer.

2. Pour the mixture into a small saucepan and bring to a simmer over medium-low heat, stirring occasionally. Reduce the heat to low and cover, stirring occasionally, until you’re ready to pour over the dish.
