The secret to good pork is slow cooking: the slower the better to make it tender. Often I cook pork in the smoker, but here is an easy indoor recipe. The barbeque sauce pulls this whole rodeo together.
1. Preheat the oven to 325°F. Lightly butter an 8-x-11-inch casserole dish.
2. Pour the lime juice all over the pork and rub it in. Rub the pork with a generous amount of seasoned salt and pepper.
3. Place the pork in the baking dish and cover with foil. Bake for 2 hours, or until the internal temperature is about 150°F. Set aside to cool.
4. When the pork is cool enough to handle, place on a cutting board and chop into pieces.
5. Place the pork in a large saucepan and stir in the barbeque sauce. Simmer over medium-low heat for about 25 minutes, stirring occasionally.
6. Spoon the meat onto the hamburger buns. Serve warm with pickles, jalapeños, and sliced onion, if desired.

A sauce needs to blend well with its partner. Pork is always good with barbeque sauce, and this one carries a bit of sweet with its bite. You can also use this sauce with other meats and dishes.
1. In a medium saucepan, combine all the ingredients and whisk well.
2. Cook the sauce over medium-low heat for about 10 minutes, or until warmed through, stirring occasionally. The sauce can be served warm, at room temperature, or chilled.
