Not a cake, not a cookie, but a moist and chewy brown sugar brownie. I love the sweet maple-like flavor brown sugar has, and if you’re a fan of coconut, come over to my house and we’ll eat these all day long. They just might take the place of your favorite chocolate brownie.
1. Preheat the oven to 350°F with a rack in the middle. Butter a 9-x-13-inch baking pan.
2. In a large bowl, beat the brown sugar and eggs together until smooth.
3. Slowly beat in the coconut, biscuit mix, and vanilla until combined. Stir in the pecans, if using.
4. Pour the batter into the pan. Bake for 25 to 30 minutes, or until golden brown and the bars set up. Feel free to make a judgment call on the baking time because the bars will set up slightly more as they cool.
Tip: I’ve also used 1½ cups instant buttermilk pancake mix in place of the biscuit mix.
