Omelet with Caviar and Sour Cream

This caviar omelet is one healthy breakfast which can be served with sour cream toppings and crispy French bread to achieve the best taste.
Ingredients (2 servings)
3 tablespoons pressed caviar
2 tablespoons sour cream
1 tablespoon minced chives
2 large eggs
1 tablespoon unsalted butter
Salt and black pepper, to taste
Preparation
Spread the caviar between two sheets of plastic into a 1/8-inch-thick (5 x 8-inch) rectangle. Cut half of this rectangle into 1/2-inch strips. Chop the remaining caviar and transfer to a small mixing bowl. Add in the sour cream and chives. Beat all the eggs in a small mixing bowl until frothy and add salt and black pepper for seasoning. Melt butter in 6-inch nonstick skillet over high heat. Pour the eggs and constantly stir with a rubber spatula, until the eggs are set. Remove from heat, add a dollop of the sour cream mixture at the center of the eggs. Shake the skillet again to loosen the omelet, and then fold 1/3 of the egg over the cream filling. Flip the cream omelet onto a plate, folding it over itself. Garnish with the caviar and serve.
