French Scrambled Eggs

French scramble is another nutritious yet simple meal for the breakfast table. It has eggs and butter, which are cooked together in a tempting combination.
Ingredients (12 servings)
12 large eggs
1/4 cup 2 tablespoons water
6 tablespoons cold butter, diced
2 teaspoons white truffle oil
1 tablespoon chives, finely chopped
6 warmed brioche rolls, toasted
Sea salt and black pepper, to taste
Preparation
Mix and beat the eggs with water in a suitable bowl. Melt 2 tablespoons butter in a stainless-steel bowl set over a pot of boiling water. Stir in the eggs and cook on low heat while stirring with a rubber spatula for about 5 minutes. Add the remaining butter to the eggs, and cook for about 5 minutes. Season with salt and black pepper and then transfer to plates. Garnish with truffle oil, chives, and serve warm with brioche.
