Ingredients (8 servings)
2 French bread baguettes, sliced
5 eggs
1/2 tablespoon butter
1 teaspoon garlic, minced
1 cup almond milk
1/2 cup egg whites
1/2 teaspoon sea salt
1/2 teaspoon black pepper
1/3 cup parmesan, crumbled
1 1/3 cup ham, diced
1 cup chopped onion
1 cup chopped celery
4 ounces feta, crumbled
Fresh herbs, to garnish
Red pepper flakes, to garnish
Preparation
At 425 degrees F, preheat your oven. Grease a 9×3 inches casserole with oil. Slice the French bread lengthwise (long) to get 4 half loaves. Spread the garlic and butter on all four slices. Place the bread slices in the casserole dish. Mix together the milk, egg, egg white, salt, black pepper, and Parmesan. Spread the ham, celery, and onion evenly over the French bread slices. Pour the egg parmesan batter over the bread, ham, and veggies. Spread the feta crumbles on top and bake for 30 minutes. Garnish with red pepper flakes and fresh herbs. Serve warm.
