Radishes with Poached Eggs

Radishes with poached eggs are known as the classic French breakfast, and they’re super and simple to make.
Ingredients (4 servings)
2 bunches French breakfast radishes, peeled and sliced
2 tablespoons butter, softened
6 scallions, diced
1 teaspoon fresh thyme
2 poached eggs
2 pieces of bread, toasted
Pinch of salt
Preparation
In a suitable skillet, melt butter over medium-low heat. Toss in scallions and sauté for 2-3 minutes. Stir in radishes, thyme, and salt. Cover and cook for 6 minutes. To serve, place the toast on two serving plates, divide the radish mixture on top, and place a poached egg on top. Serve.
