Flaugnarde with Pears

Flaugnarde are made of egg, flour, and milk and served the most in the French culinary tradition. When coupled with pears, the Flaugnarde beats all the others.
Ingredients (6 servings)
3 large eggs
3/4 cup cake flour
1/4 cup all-purpose flour
1 cup warm milk
1 tablespoon dark rum
3 tablespoons sugar
2 ripe medium Bartlett pears, peeled, cored, and sliced
Pinch of salt
Preparation
In a suitable bowl, mix the eggs, with cake and all-purpose flours, salt, and 1/4 cup of the milk until lump-free and smooth. Stir in the remaining 3/4 cup of milk, rum, and 1 1/2 tablespoons sugar. Cover this flour mixture with a plastic wrap and leave it for 3 hours. At 450 degrees F, preheat your oven and grease a deep 9-inch cake pan with half of the butter. Pour and spread the prepared batter into the cake pan and arrange the pear slices on top. Add the remaining butter on top and bake in the lower third portion of the oven for about 15 minutes. Reduce your oven’s temperature to 400 degrees F and bake for another 30 minutes. Allow it to cool for 2 minutes, then garnish with 1 1/2 tablespoons of sugar. Slice and serve.
