If you haven’t tried the Gibassier before, then here comes a simple and easy recipe that you can prepare at home in no time with minimum efforts.
Ingredients (16 servings)
3/4 cup 2 tablespoons bread flour
1/3 cup cold milk
1 cold egg
1 Pinch fresh yeast
Dough
3 3/4 cups bread flour
1/2 cup 2 tablespoons sugar
1/2 tablespoon salt
1-ounce fresh yeast
3 cold eggs
1/2 cup olive oil
1/3 cup cold water
2 teaspoons orange blossom water
2 teaspoons anise seed
1/2 cup orange peel, diced
7 tablespoons butter
Egg Wash
2 large eggs
1/2 cup granulated sugar
Preparation
In a stand mixer with a dough hook, add the bread flour, milk, 1 egg, and a pinch of yeast and mix until it makes rough dough. Cover and leave it for 8 hours. Add the bread flour, sugar, salt, yeast, olive oil, eggs, waters, and anise seed to the prepared sponge mixture and blend on low speed until combined.
Speed it up and knead the dough for 5 minutes more. Add the orange peel and continue to knead for about 3 minutes until the dough is elastic. Add butter as you mix the dough. Divide the dough into 16 balls. Layer two baking sheets with nonstick cooking spray and parchment sheet. Place the rolls in the baking sheets, brush them with olive oil, loosely cover with plastic wrap and leave them to proof in a warm area for 1 1/2 hours.
At 350 degrees F, preheat your oven. Meanwhile, mix one egg and one egg yolk in a suitable bowl. Using a pastry brush, brush each roll evenly with the egg wash. Sprinkle each roll with granulated sugar. Bake at about 350 degrees for almost 20 minutes until golden. Serve warm with honey butter.
