There are endless varieties of these in French cuisine, and this is one of the most delicious appetizers. You can try different variations for its toppings as well.
Ingredients (4 servings)
Crostini base
1 baguette
Extra virgin olive oil
1 garlic clove
Topping
2 large ripe tomatoes
Extra virgin olive oil
Small handful basil leaves
Salt and black pepper, to taste
honey, for drizzling
Preparation
At 375 degrees F, preheat your oven. Cut the baguette into 1 inch thick diagonal slices. Place these slices on a baking sheet, drizzle oil on top, and bake for 8 minutes. For the tomato, basil, and mint topping, chop the tomatoes and add them to a small bowl. Drizzle the oil, basil, and mint leaves, salt, black pepper, and sugar. Toss everything together. To assemble, simply spread the tomato mixture on top of eight crostini. Garnish with honey. Serve.
