Pea and Prawn Crostini

Who doesn’t love crostini? Seafood lovers adore prawns on the menu, and this recipe is a must to have for every seafood menu.
Ingredients (12 servings)
9 ounces frozen petit pois, defrosted
½ lemon, juice
1 garlic clove, crushed
3 leaves fresh mint, torn
1 tablespoon olive oil
12 slices baguette
36 small peeled prawns
Handful fresh pea shoots
Preparation
Toss the peas with a squeeze of lemon juice, the garlic, mint, oil, and seasoning in a bowl. Chill until ready to serve. Arrange and set the thick bread slices in a single layer on a baking sheet and drizzle with the oil. Grill until toasted on both sides. Arrange and set on a serving platter and top each one with a spoonful of pea puree. Top with 3 prawns each and garnish with pea shoots.
