Salmon and Guacamole Cones

These salmon cones will satisfy your salmon and guacamole craving in no time. They’re quick to make and bake if you have ready to serve tortilla at home.
Ingredients (6 servings)
1 red chili, chopped
Zest 1 lime
3 spring onions, chopped
1 small bunch fresh coriander
1 ripe tomato
1 teaspoon caster sugar
3 skinless salmon fillets
12 ounces pack corn tortillas
7 ounces pack guacamole
1/2 cucumber, halved, deseeded, and sliced
Preparation
Blend chili, with lime zest, spring onions, half the coriander, tomato, and sugar in a blender until coarse. Place the skinless salmon fillet on a baking sheet and spread the marinade on top. Marinated for 30 minutes. Heat and prepared grill at high heat and cook the salmon fillets for 12 minutes. Flake the fillet into large chunks. Warm and heat the tortillas according to instructions and then cut each into half. Roll each tortilla half into a cone. Fill each tortilla cone with 1 teaspoon guacamole, a few slices of cucumber, coriander leaves, and flaked salmon. Serve warm.
