Beetroot Blinis

Beetroot blinis are the best appetizer and snacks to find on French cuisine. These blinis are loaded with nutrients and stuffed with beat root, ricotta, and mushrooms.
Ingredients (8 servings)
For the Blinis
5 ounces buckwheat flour
2 teaspoons fast-action yeast
1 cup milk, warmed to blood temperature
2 eggs, beaten
1 2/3 tablespoon butter, melted, for frying
Topping
5 ounces packed beetroot
3 tablespoons crème fraiche
4 ounces ricotta
Small bunch dill, half roughly chopped
1 1/2-ounces butter
9 ounces button mushrooms, sliced
3 garlic cloves, finely chopped
Preparation
Mix all the blini ingredients in a mixing bowl until smooth. Then leave the blini mixture in a warm place for 30 minutes until foamy and frothy. Heat a large suitable skillet over medium heat, grease it with the melted butter and add teaspoonfuls of batter into the pan, 2 inch apart, and cook for about 1 1/2 minutes per side. Cook the blinis in batches. Blend the beetroot, crème fraiche, and ricotta in a food processor until coarse. Stir in the dill and chill. Melt the butter in a suitable large skillet, add mushrooms and garlic, and sauté until deep golden. Place the blinis on a serving platter, spread a teaspoonful of beetroot mix on top of each, add mushrooms, and garnish with a dab of dill.
