Enjoy these simple and easy salmon bites, locally known as the salmon roses. Serve as both snacks and appetizers.
Ingredients (2 servings)
5 ounces rye bread, toasted
3 1/2 ounces half-fat crème Fraiche
3 1/2 ounces light cream cheese
1 lemon, zest, and juice
2 tablespoon fresh chives, chopped
1 tablespoon fresh dill,
3 1/2 ounces smoked salmon
Preparation
Using a round cookie cutter, cut rounds from the rye bread. Beat the cream cheese, crème Fraiche, and lemon juice using an electric hand mixer until smooth. Fold in fresh herbs and salt. Transfer the cream filling into a piping bag with a star-shaped nozzle and pipe onto each rye bread round. Roll up a slice of salmon and curl out their edges to make a rose. Place one on top of each canape and garnish with zest and dill. Serve.
